Amish Apple Fritter Bread

Ingredients

Cinnamon Apples:

2½ cups granny smith apples, chopped , (2-3 apples)

1 tbsp lemon juice

2 tsp cinnamon


Bread:

½ cup salted butter, softened

¾ cup white granulated sugar

3 large eggs

2 tsp vanilla extract

½ tsp salt

2 cups all purpose flour

1 tsp baking powder

½ tsp baking soda

½ cup buttermilk

¼ cup brown sugar

1 tsp cinnamon

¾ cup walnuts, chopped *optional


Glaze:

½ cup powdered sugar

1 tbsp whole milk or cream

Instructions

Preheat the oven to 350 degrees. Line a 9x5" bread pan with parchment paper and set aside.

Prepare cinnamon apples by chopping into ¼ inch pieces, adding lemon juice and cinnamon, stirring and letting rest.

Prepare bread batter by creaming together butter and white granulated sugar until fluffy, 3-4 minutes.  Add in the eggs, vanilla, and salt, and mix well until creamy, 2-3 minutes, scraping sides of the bowl occasionally.

Add flour, baking powder, baking soda, and buttermilk last. Mix until just combined, then stir in half of the apples. If desired, stir in the chopped walnuts at this time too.

Pour into prepared 9x5 bread pan and spread remaining apples on top. Mix together brown sugar and cinnamon and sprinkle over apples.

Bake for 50-60 minutes until inserted toothpick comes out clean. Remove and cool for at least 15 minutes.

For the glaze, combine powdered sugar and milk, mix well, and drizzle over bread before slicing and serving.
