Ingredients:

Butter: 150g (⅔ cup)

Sugar: 150g (¾ cup)

3 Eggs

Plain Flour: 175g (1 cup, 3 tablespoons)

Baking Powder: 1 teaspoon

Vanilla Extract: 1 teaspoon

Almond Essence: ½ teaspoon (optional)

Dried Fruits: 400g (about 2 cups)

Dried Dates: 200g

Green Glazed Cherries: 100g

Raisins: 100g

Some Whole Almonds

Equipment:

Measuring cup size: 240ml

7-inch round baking pan

Oven preheated to 170°C (338°F)


Instructions:

Preparing the Cake Batter:

1. Preheat the Oven: Preheat your oven to 170°C (338°F).

2. Prepare the Pan: Grease and flour a 7-inch round baking pan to prevent sticking.

3. Mix Wet Ingredients: In a large mixing bowl, cream together 150g (⅔ cup) butter and 150g (¾ cup) sugar until light and fluffy.

4. Add Eggs: Gradually add the eggs, one at a time, beating well after each addition.

5. Incorporate Flavors: Stir in 1 teaspoon of vanilla extract and ½ teaspoon of almond essence (if using) for enhanced flavor.

6. Combine Dry Ingredients: In another bowl, sift together 175g (1 cup, 3 tablespoons) plain flour and 1 teaspoon of baking powder.

7. Mix Everything Together: Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix the batter.

8. Add Dried Fruits: Fold in 400g of mixed dried fruits, including 200g dried dates, 100g green glazed cherries, and 100g raisins, until evenly distributed.

Baking the Cake:

1. Transfer to Pan: Pour the batter into the prepared baking pan, spreading it out evenly with a spatula

2. Decorate with Almonds: Place some whole almonds on top of the batter for decoration and added crunch

3. Bake: Place the pan in the preheated oven and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean
